Easy banana and chocolate cupcakes recipe
These easy vanilla cupcakes will be ready in just 25 minutes. Are perfect for birthdays, picnics or whenever you fancy a sweet treat.
Ingredients
110g melted butter
60g brown sugar
2 large eggs
½ tsp vanilla extract/or paste
100g self-raising flour
10g cocoa powder
2 large very ripe bananas (mashed with a fork)
pinch of salt
2g baking soda
Optional 50-80g dark chocolate chips
Method
Preheat oven to 165 degrees. Fill a 12 cupcake tray with cases; set aside.
Combine the sugar, flour, cocoa powder baking soda, and salt in a bowl.
In a separate bowl combine the eggs, melted butter (you can microwave it), vanilla and banana mash.
Pour the wet mixture into the dry and stir ONLY until you can no longer see the dry ingredients.
Optional -Gently mix in the chocolate chips.
Drop batter into the 12 cups, filling each about 3/4 full.
Bake cupcakes for 25 minutes (you'll know they're done if an inserted toothpick comes out clean).
Remove cupcakes from tins and let them cool for about 1 hour, on a wire rack.
You can choose to decorate the cupcakes with buttercream, chocolate ganache or cream cheese. They are delicious and healthy!
